Menu Plan Monday


It's that time again - Menu Plan Monday over at I'm An Organizing Junkie.


For breakfast this week we'll have one or more of the following:

Cereal
Soaked Oatmeal
Eggs
Whole Wheat Waffles
Apple Breakfast Cake
Breakfast Cookies
Fruit

Smoothies

For snacks we'll have one ore more of the following:

Hummus with carrot and celery sticks
Clementines
Apples with peanut butter
Pecans
Raisins


Lunches are generally leftovers from the night before.

Monday - Baked Sweet Potatoes, Salad and Brown Rice Pilaf (ended up making this last Saturday, but have plenty for another meal...woo hoo for an easy meal on Monday night!)


Tuesday - Greek Herbed Chicken & Potatoes (crockpot) with Salad

Wednesday - Frittata, Muffins and Fruit (pulled from last week since I ended up not needing to make this)

Thursday - Lima Bean Cassoulet (crockpot), Salad and Bread

Friday - Chipotle Knockoff -
Carnitas, Black Beans & Basmati Rice with sauteed onions/peppers, guacamole, sour cream, cheese (dairy for everyone but me), salsa and Whole Wheat Tortillas, "Mounds" Candy Bar" for dessert

Saturday - Broiled Indian Spiced Fish, Aloo Gobi and Brown Rice

Sunday - Pinto Beans and Rice (freezer from a few weeks ago), Cornbread & Streamed Broccoli
