Menu Plan Monday
Here's our menu for the week. It appears it will be a fairly easy cooking week around here...yeah! That just means more time to play with kids and prepare for Ben's family birthday party at the end of the week.
For breakfast this week we'll have one or more of the following:
Whole Wheat Waffles
For snacks we'll have one ore more of the following:
Hummus with carrot and celery sticks
Whole Wheat Cracker and homemade pecan butter
Lunches are generally leftovers from the night before.
Monday - Chicken Tortilla Soup (crockpot)
Tuesday - Pinto Beans & Rice (crockpot) with avocados, sour cream and tortillas on the side (I ended up not making this last week, so it was moved to this week)
Wednesday - Sweet Potatoes, Brown Rice Pilaf, Salad and Rolls
Thursday - Eating out for Ben's 2nd birthday!!!
Friday - Chicken Chili (adapted from Nourishing Traditions), cornbread/fritos, fixings, carrot cake (we are having a family birthday party this night!)
Saturday - Frittata, Fruit Salad and muffins
Sunday - Baked Pasta (freezer), Salad and focaccia (adapted from this recipe)
